My neighbor just gave birth to her second son, over the weekend, so of course I wanted to bring them dinner.
I spent a good 45 minutes browsing through “healthy drop off meal ideas” on good ol’ Pinterest. I wanted something I felt like the entire family would enjoy. Lets face it quinoa is BORINGGGG. I found this one, it looked delicious, so I went for it. I made a couple changes, instead of just spinach, I added in Kale as well. You could pretty much put in whatever veggies you want in this recipe and it would be good! I also opted to use Gluten Free panko bread crumbs instead of the cheese whisps.
