This is a super super easy make ahead dinner, that the whole family will love.
What you’ll need:
- Strainer
- Large pan
- Medium Bowl
- Potato masher (a fork will work if you don’t have a masher
- Baking Dish
- Avocado or Olive Oil
Ingredients
(serves 4-6 depending on how big you make the burritos)
- Cream Cheese 4oz.
- Yellow Onion 1
- Baby Spinach 5oz or about 1-2 cups
- Black Beans 1 can or 1 box
- Ground Turkey 20oz
- Taco seasoning 2 packets
- Diced Tomatoes 1 can
- Flour burrito size tortillas
- Cheddar Cheese 1 cup
- Cilantro 1/2oz
- Lime 1
Preheat your oven to 475. Let cream cheese sit room temp for about 20-30 to soften up. prewash and all produce. Finely chop onion. rough chop spinach. Drain and rinse beans.
In your large pan drizzle some oil on medium heat, add in onion and season with salt and pepper. Cook until softened about 3-4 minutes. Add Turkey and taco seasoning, breaking up turkey into pieces. Season with salt and pepper. cook until no longer pink about 5 min.
Stir in tomatoes and spinach into your pan, stirring occasionally, until slightly thickened 2-4 minutes. Reduce heat, allow to simmer. Meanwhile in your medium bowl, add cream cheese and beans. Mash with your masher or fork until mostly smooth. Season with salt and pepper.
Remove your pan from heat and strain out all the liquid in the pan.
Spread bean mixture in an even layer on the tortilla. Divide turkey mixture between each and roll up.
Spray your baking dish with non stick spray and place burritos seam-side down. IF you have extra turkey mixture you can just add to your baking dish. Top burritos with cheese, bake in oven until cheese is melted about 4-5 minutes.
While burritos are baking roughly chop your cilantro and slice your lime into wedges. Once burritos are finished, sprinkle cilantro over the top. Serve with a lime wedge.
